And it uses a Raspberry Pi.

I think I even suggested that in one of the threads at that Other Place when people were talking about buying those $500 Hemingways/Freewrite things.  A Raspberry Pi setup would be so much less expensive.  The builder of the one you posted says it cost about $180 to build.  Here's his link: Ultimate Writer. Downside is the slow refresh rate on eInk displays.  I hope they will be able to eventually build eInk displays with faster refresh rates.  I think they are easier on the eyes than LED displays and if you're doing work, like writing, where you don't need full color, an eInk display might cause less eyestrain when you're staring at it for hours versus a full color LED display.  They even have three-color (black, red and white or black, yellow and white) eInk displays so if you did need color (like highlighting changes, edits, etc.), there would be an option for that.
